Single-Serving Recipe
Serviceware: 10.5 oz tall tumbler
In a mixing tin:<br /> 2 fl-oz (60 mL) light rum (Havana Club Añejo Blanco or Ron Matusalem Platino)<br /> 1 fl-oz (30 mL) fresh-squeezed key lime juice<br /> 1 tbsp (15 mL) superfine sugar -OR- 3/4 oz (22.5 mL) 1:1 simple sugar syrup
In serviceware:<br /> 4 x 1 fl-oz cubes of ice
In mixing tin:<br /> Add 7-8 1/2 fl-oz (30 mL) cubes of ice<br /> Shake vigorously for 15-20 seconds<br /> Strain into serviceware
Top with:<br /> 1.5 fl-oz (45 mL) Null-Mate
Garnish with:<br /> Lime wheel
Serve and enjoy.
Keg-Size Recipe
6.0L light rum (Havana Club Añejo Blanco or Ron Matusalem Platino)<br /> 4.5L Null-Mate (make with still water)<br /> 3.0L fresh-squeezed key lime juice (strain out the pulp)<br /> 1.5L granulated or superfine sugar<br /> 3.0L water
Combine all ingredients in a 5 gallon keg. Chill and carbonate.
Serving size is 6 fl-oz. (180 mL). Serve in small cups.
Batch Recipe
4 parts light rum (Havana Club Añejo Blanco or Ron Matusalem Platino)<br /> 3 parts Null-Mate (make with still water)<br /> 2 parts fresh-squeezed key lime juice (strain out the pulp)<br /> 1 part superfine sugar<br /> 2 parts water
Combine all ingredients in a large mixing bowl, and stir till sugar is completely dissolved. Pour into suitably-sized container and chill. Serve carbonated over ice.
Serving size is 6 fl-oz. (180 mL). Enjoy in moderation.
