Null-Mate is an approximation of Club-Mate. It is slightly more bitter and has a much fuller, earthier taste.
- Hoja 100% mate
- Water (still or carbonated; see below)
- Refined sugar (suggest superfine / baker's for quick dissolution)
Step 1: Brewing the mate
Bring water to about 170F (76.6C). Do not over/underheat by more than 10F.
While water is heating, place ground mate in a glass mixing bowl. For each 1L of water, use 100g of mate.
Add water to mixing bowl and stir until no bits of dry mate sit on top of the mixture. Let steep for three minutes, stirring occasionally.
Strain into clean bowl.
Step 2: Dilution and sweetening
If planning to carbonate at time of service:
Dilute 1 part mate infusion with 3 parts still water.
For each 1L of resulting mixture, add 66.6g of sugar.
If planning to carbonate by using soda water:
For each 1L of total mixture after dilution, add 66.6g of sugar to mate infusion and stir until sugar is completely dissolved.
Dilute 1 part mate infusion with 3 parts soda water. Stir briefly and gently to avoid the mixture going flat.
